The artisanal Avola almond block is ideal for obtaining real Sicilian almond milk or for the preparation of excellent granitas or for the preparation of numerous other desserts. A true concentrate of energy obtained from the processing of shelled Avola almonds and is rich in:

Recommendations for Use
Dissolve the contents of a 250 g pack of pasta. in a blender with 1L/1.5L of water, bottle and place in the fridge.
One pack of 250 g. it is enough to make 1L/1.5L of almond milk.
The almond milk thus obtained can be kept in the fridge for approximately 3/4 days. Before serving it cold, it is best to shake it slightly.
If you want to make almond pudding or ” Blancmangiare ” – as known in Sicily – just use the almond milk obtained with the procedure described above and add 80 g of starch for desserts, put everything in a saucepan, mix until boiling. Place the contents in a mold and place in the fridge, serve cold.

What is almond paste?
Almond paste is a confectionery mixture prepared with sugar and almonds which is the basis of various traditional desserts from some regions of Southern Italy.
The other name by which almond paste is known is that of royal paste (” Pàsta riàli ” in Sicilian), which probably served in ancient times to signal the extraordinary goodness of this simple dough which, although with poor ingredients, was of a kindness worthy of a king.
The history of almond paste
The origins of this paste and its use in pastry making are lost in legend and date back to a few centuries ago. It is said, for example, that Royal Pasta was born around the 11th century within the walls of the Martorana convent in Palermo . Here, in one of the most fascinating Byzantine churches on Italian soil, the monks combined water, sugar and the almonds dear to the Sicilian territory, to create a prodigious dough, so good that it was then used for many recipes in pastry shops throughout the region and then of neighboring regions.
Traditional recipes with almond paste: preparations and products
The cassata , the Caltanissetta rollò , the ricotta cassatelle typical of Trapani or the ricotta cassatine are just some of the desserts that are prepared with almond paste.
Among the most representative desserts we cannot fail to mention martorana fruit , i.e. fake fruit (but you can also find forms of vegetables or fish) made entirely of almond paste. This product, a true masterpiece of Sicilian confectionery craftsmanship known throughout the world, has also become part of the Typical Agri-Food Products (PAT) of the Sicily region. This particular dessert, which owes its name to the church of Santa Maria dell’Ammiraglio or Martorana in Palermo , traditionally came on the occasion of the feast of the dead, November 2nd.
If that wasn’t enough, the famous Sicilian biscuits are also made with a base of almond paste. The same pasta, as we have said, is widespread in confectionery preparations in other Italian regions such as Puglia, Calabria and Lazio. In the latter two regions it is registered as a traditional product.
